If you haven’t guessed by now, crumble/crisps are my favourite kind of dessert to make – I’ve made more crumble than any other kind of dessert.
I think it’s a combination of things; I always get too many berries, and crumbles are very easy to make and oh so delicious.
Like this strawberry blueberry crisp with coconut flakes…
It’s starts with the perfect topping; crushed honey graham crackers, coconut flakes and oats, with coconut oil mixed in until crumbly.
And the filling; strawberries, blueberries, lemon juice, cornstarch and sugar.
When it’s all put together, sprinkle the top with ribbons of coconut.
Bake till the top is golden brown and the fruit beneath bubbles.

I think that the combination of grains and fruit is what really draws us to crisps. Some days I crave just something with that combination. This recipe does look like a great one to go to for satisfying that craving. Great berry choice and I really like the addition of the coconut. Yum!
