Crumbs Everywhere

We came into a wealth of blueberries last summer.
We got a big carton of blueberries and after initially gorging on them; we packaged them in convenient packs and froze them for use all year round.
We do this too sometimes for strawberries and other summer berries.
I love blueberries!
Blueberries are handy to have around for smoothies, yoghurt and cereal toppings, etc.
And baking… I love blueberry-baked goodies.

Cake

Here’s a very simple blueberry crumb cake I made, I used the recipe for Wacky Cake , omitting the cocoa powder, I tossed in about a cup of blueberries instead.
For the ‘crumb’ I grabbed a few cinnamon graham crackers (from Trader Joe’s) and toasted almonds, tossed it into a food processor and gave it a few pulses.
I piled it atop the cake batter, baked for 30 – 35 minutes…
