Roasted veggies and herbed salad sandwich.
This was my dinner;
It starts with toasted whole-wheat bun, with pesto spread and a dash Dijon mustard.
Green and red bell peppers, onions and carrots make the roasted veggies.
Topped with the herbed greens and finished off with balsamic vinaigrette.
So good!
